GF Drop Biscuits (Crispy Outside, Soft Inside)

GF Drop Biscuits

Easy gluten-free biscuits with crispy edges and a soft, buttery middle. No rolling, no fuss—just drop 'em and bake 'em.

🛒 Ingredients:

  • 1½ cup gluten-free flour blend (make sure it has xanthan gum or add ½ tsp if not)
  • 1 tsp tapioca starch
  • ¼ tsp salt
  • ½ tsp baking soda (if you have it – needed for lift)
  • ¾ cup whole milk or non-dairy milk + 1 tsp vinegar or lemon juice (let sit 5 mins to curdle – homemade buttermilk!)
  • 1 egg
  • 2 tbsp melted butter or oil (adds richness that heavy cream would provide)

🥄 Directions:

  1. Preheat oven to 400°F.
  2. If using milk + vinegar, mix and let sit for 5 minutes to curdle.
  3. In a bowl, mix dry ingredients: gf flour, salt, tapioca starch, and baking soda (if using).
  4. In another bowl, whisk egg, curdled milk (or alt milk), and butter/oil.
  5. Combine wet and dry ingredients; mix just until combined.
  6. Drop spoonfuls onto a lined baking sheet.
  7. Bake for 10–12 minutes, or until golden.

Optional: Serve warm with a drizzle of honey. YUM!
