Apple Cider Vinegar Beef Jerky Marinade (AIP Compliant)
For 3 lbs of meat | Dehydrator-friendly | Sweet, tangy, and AIP-approved
🥄 Ingredients:
- ½ cup apple cider vinegar
- ½ cup coconut aminos (use instead of tamari for AIP)
- 2 tbsp maple syrup or honey
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp black pepper (omit for strict AIP or sub with ground ginger)
- 1 tsp smoked paprika (omit for strict AIP or use ½ tsp turmeric for earthy flavor)
- 1 tsp red pepper flakes (omit for AIP)
🥩 Instructions:
- Slice beef into ¼-inch strips (freeze 30 minutes first to make slicing easier).
- Mix all marinade ingredients in a large bowl or ziplock bag.
- Add meat, toss to coat, and marinate 12–24 hours in the fridge.
- Lay strips in a single layer in your dehydrator.
- Dehydrate at 160°F for 4–6 hours. Start checking at 4 hours—the jerky should bend but not break.
💡 Flavor Boosts:
- Add ½ tsp liquid smoke for a bolder smoky taste (check ingredients for AIP compliance).
- Mix in ½ tsp ground mustard or ginger for tang and spice (ginger = AIP win).
AIP Tip: Always double-check spice labels for fillers, and skip black pepper, paprika, and chili flakes during strict phases.
