AIP Slow Cooker Brisket
Serves: 6–8
Cook Time: 8–10 hours on low
🛒 Ingredients:
- 3–4 lb grass-fed beef brisket
- 1 tbsp sea salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp ground ginger
- ½ tsp ground cinnamon
- 1 tbsp dried rosemary (or 2 tbsp fresh)
- 1 tbsp dried thyme (or 2 tbsp fresh)
- 2 tbsp coconut aminos
- 2 tbsp apple cider vinegar
- 2 tbsp avocado oil (or coconut oil)
- 1 large onion, sliced
- 2–3 cloves garlic, smashed
- 1 cup bone broth (beef or chicken)
- Optional: 1 tbsp grated fresh horseradish (AIP-friendly and adds zing!)
🥄 Instructions:
Sear the brisket (optional but yummy):
In a large skillet, heat oil over medium-high. Sear brisket 2–3 mins per side for color and flavor.
Mix the seasoning:
In a bowl, combine salt, garlic powder, onion powder, ginger, cinnamon, rosemary, and thyme. Rub all over the brisket.
Layer the slow cooker:
Place sliced onions and smashed garlic at the bottom of the slow cooker. Lay the brisket on top.
Add liquids:
Pour bone broth, coconut aminos, and apple cider vinegar over the meat.
Cook:
- Low for 8–10 hours (preferred for tenderness)
- Or high for 5–6 hours if you're short on time
Rest & slice:
Let the brisket rest 10–15 minutes before slicing against the grain. Drizzle with some of the cooking juices.
🍽 Serving Ideas:
- Serve with roasted carrots, mashed Japanese sweet potatoes, or sautéed greens.
- Or pile into lettuce cups with fermented onions for a gut-friendly twist.
