🍴 Master Yogi AIP Meatloaf (1 Pound Hamburger Version)
This AIP-friendly meatloaf skips the eggs, dairy, and grains but keeps all the comfort. With coconut aminos, bone broth, and optional veggie boosts, it’s juicy, flavorful, and ready to nourish.
🍖 Ingredients:
- 1 lb ground beef
- 2 tbsp tapioca flour or cassava flour
- ¼ cup finely minced onion (or onion powder if raw onion’s too much)
- 2 cloves garlic, minced (or garlic powder)
- ½ tsp sea salt
- ½ tsp black pepper (skip if strict AIP — use ginger powder instead!)
- ½ tsp dried oregano or thyme
- 1 tbsp coconut aminos (instead of Worcestershire)
- 2 tbsp bone broth or water (adds moisture)
- Optional: ¼ cup finely shredded zucchini or carrot (moisture + sneaky veggie!)
👩🍳 Instructions:
- Preheat oven to 375°F.
- In a large bowl, mix ground beef, flour, onions, garlic, herbs, salt, coconut aminos, and broth.
- Form into a loaf shape or press into a loaf pan.
- Optional glaze: Brush top with a mix of 1 tbsp coconut aminos + 1 tbsp apple cider vinegar + pinch of honey (for a faux ketchup vibe).
- Bake for 30–40 minutes, until cooked through (internal temp 160°F).
- Let it rest 5–10 minutes before slicing.
📝 Notes:
- No egg needed — the tapioca or cassava binds it just fine.
- Bone broth keeps it juicy, especially without eggs.
- For a more “bready” texture, add a few extra tablespoons of cassava flour.
